Raspberry Salsa

Ingredients

  • 10 plum tomatoes diced
  • 1 large onion diced
  • 3/4 cup raspberries
  • 1 poblano peppers diced
  • 2 teaspoons cumin
  • 1/2 cup water
  • 3 tablespoons tomato paste
  • 1/2 cup brown sugar packed
  • 2 medium carrots shredded
  • 4 cloves garlic crushed
  • 2 teaspoons salt
  • 1 tablespoon lemon juice

Instructions

  1. Mix all ingredients in a food processor until fairly smooth. Great on chips, chicken, fish.
  2. I always improvise. When different peppers are ready, I use them. If I use home grown tomatoes, the water may not be needed. I rarely measure these ingredients, rather it is more fun to guess.
