Raspberry Salsa
Ingredients
- 10 plum tomatoes diced
- 1 large onion diced
- 3/4 cup raspberries
- 1 poblano peppers diced
- 2 teaspoons cumin
- 1/2 cup water
- 3 tablespoons tomato paste
- 1/2 cup brown sugar packed
- 2 medium carrots shredded
- 4 cloves garlic crushed
- 2 teaspoons salt
- 1 tablespoon lemon juice
Instructions
- Mix all ingredients in a food processor until fairly smooth. Great on chips, chicken, fish.
- I always improvise. When different peppers are ready, I use them. If I use home grown tomatoes, the water may not be needed. I rarely measure these ingredients, rather it is more fun to guess.
