Raspberry-Lemon Baked Oatmeal WW

Ingredients

  • 4 cups old-fashioned oats
  • 1 1/2 cups unsweetened vanilla almond milk 360mL
  • 2 cups unsweetended applesauce 492g
  • 4 large Eggs
  • 1/2 cup sugar free maple syrup 120ml
  • 4 teaspoons Vanilla extract
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 Lemon peeled and seeded
  • 1/2 cup stevia
  • 24 ounce frozen raspberries
  • 9 ounces nonfat Greek yogurt
  • 6 tablespoons sugar free maple syrup 90mL
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon Vanilla extract
  • 5 grams Fat Free Reddi Whip

Instructions

  1. Preheat oven to 350 degrees. Spray a 9” x 13” glass baking dish with cooking spray.
  2. In a mixing bowl, combine oats, milk, applesauce, eggs, syrup, vanilla, baking powder, and salt. Send lemon through a chopper or blender with Stevia before adding. Stir in frozen berries.
  3. Pour into prepared baking dish. Bake for 55 minutes or until set and lightly brown.
  4. Combine all glaze ingredients; cover and refrigerate.
  5. Serve warm or cold with glaze.
  6. Store in refrigerator for up to one week.
  7. I reheat each piece in the microwave on HIGH for 30 seconds. Top warm oatmeal with a couple spoonfuls of glaze.
